This salad was a product of my attempt to revive with colors boring rainy day, which leaked down the windows during one winter. Born as something that should make arugula looking more attractive, to sprinkle lunch with colors and be an interesting addition to chicken dish, result at the end was more then satisfying. I had only one doubt – what kids will think about this experiment, because they usually think if there isn’t tomato or cucumber in a salad, then it can’t be called a salad. One is sure – with this explosion of vitamins, every virus will search the first exit out.
- 50 gr arugula
- 125 gr mozzarella
- 1 avocado
- 1 lime
- 1 orange
- 1 kiwi
- olive oil, dill, salt
- Wash arugula and chop it into smaller pieces.
- Cut into cubes mozzarella, avocado, orange and kiwi.
- Put almond in a blender to chop it a little bit.
- Mix all together and season with 1 lime juice, a little olive oil, dill and salt.
