Pumpkin cream soup

When you start to like Mondays, that is sign that you do what you like and that you are satisfied with your life. For those ones who are not in that phase yet, here is one great food which will improve your mood and help fighting with anxiety and depression. I wish you great start of the week!

Ingredients:

  • 750 gr pumpkin
  • 1 spoon of oil
  • 1 onion
  • 100 ml vegetable broth
  • 1 spoon of salt
  • 500 ml water

Directions:

  • Cut pumpkin on small cubes and cook on high heat approximately 30-35 minutes with 200 ml water.
  • When pumpkin is cooked, blend it.
  • In the other pot pour oil, heat up it and add finely chopped onion.
  • Cook for 3 minutes, then add pumpkin, vegetable broth, salt and water and continue cooking for another 10 minutes.
